My Famous Guacamole

This recipe showcase is long past over due, but leave your doubts at the door because this simple yet simply delicious recipe will knock the icing off your store bought guacamole. There’s nothing much to it- avocado, cilantro, pepper, tomato- the freshest ingredients around to give it a fresh bite. It gives even the pickiest of eaters something to look forward to when they come sulking to the table.

This is the most used recipe at my house, especially during the summer when the avocados drop in price at the grocery store. I usually make a large batch over the weekend and we incorporate it throughout our meals and into the week. Guacamole is so versatile, using it on toast in the morning, pita chips with lunch, on top of rice and chicken to give it a smooth kick, a finishing touch for fish tacos, you see-it can be used for literally everything. It’s an easy way to eat avocados, which are filled with antioxidants, healthy fats, and anti-inflammatory agents.

When I make my guacamole, the texture is most important. I use a potato masher to get the avocados into a nice paste before adding the rest of the ingredients. Chopping all ingredients into small pieces is key as well, who wants to chomp into a huge slice of onion or get a mouthful of hot serrano peppers? Nobody.

This recipe yields about 3-4 cups of guacamole, allowing it to last and stretch a bit further than just one meal. But if you and your better half happen to love guacamole, it may be gone in one sitting. Don’t say I didn’t warn you!


 

INGREDIENTS

  • 3 Avocados
  • 1/2 cup Chopped Red Onion
  • 2 Tbsp Minced Cilantro
  • 1 Chopped Tomato
  • 1 Minced Serrano pepper
  • 1 Lime; Zest and Juice
  • Dash of Salt and Pepper

RECIPE

yields 3-4 cups

  1. In a medium sized mixing bowl, mash up the peeled and pitted avocados to form a paste.
  2. Add the remainder of the chopped ingredients- red onion, cilantro, tomato, serrano pepper, lime zest and juice, salt & pepper to the avocado paste.
  3. Mix until all the ingredients are evenly combined.
  4. Serve fresh.

**Store in a glass air tight container in the refrigerator for up to 5 days.
