“Cinnamon Waffles with Blackberry Mint Syrup”

I can’t even say the entire name of this recipe without my mouth watering for the sweet goodness of waffles for breakfast. Mmm.. is it time for breakfast yet? 

I created this waffle recipe after several Saturday waffle fails. My husband sure doesn’t have a problem telling me when I could improve my cooking game, something I don’t mind hearing. He seems to like pretty much anything I cook, but for some reason my waffle skills were just not up to par. So the challenge of whipping up exceptional waffles was accepted. 

The key to good waffle making, (any baker should know) is finding the right technique, using good equipment and an even better recipe. Yes, I use recipes and they are all from scratch. And yes, I believe that making pancakes and waffles from a box is cheating. The boxes contain additives, preservatives and other chemicals you can’t even pronounce. Save your body from consuming the chemicals and make it at home. 

It’s so easy y’all, scoop some flour here, pour some milk there, melt in some butter and wha-la you’ve got yourself homemade waffles from scratch! Now I have a confession, my waffles are a bit different. I don’t use milk and I don’t use butter, plus I add in some extra flavors to get your sweet tooth smiling. It’s all good, I promise- your bound to like these waffles even more than your traditional boxed waffles.

INGREDIENTS

For the Waffles 

For the Blackberry Mint Syrup

 

WAFFLE RECIPE 

  1. In a medium sized mixing bowl, whisk together the first four dry ingredients (flour, baking soda, baking powder, & cinnamon).
  2. Add the eggs, almond milk, and melted coconut oil to the dry mixture. Whisk until well combined.
  3. After the mixture is smooth, add in the vanilla extract and mix well.
  4. Cook the waffles like you would in a normal waffle maker. While cooking, start making the blackberry mint syrup.

 SYRUP RECIPE

  1. Using a morter and pestle (or a small bowl and something to mash up the blackberries with), add the blackberries and mash them up so that it has a chunky jam-like texture.
  2. Add the agave nectar and chopped mint leaves to the jam and mix well to combine.

 

*After the waffle is cooked, layer the blackberry mint syrup on top of the waffle

**drizzle with more pure maple syrup if needed
