When you get home from the grocery store with a basket full of zucchini, what do you make?
If you are like me, it’s only a matter of time before baked zucchini gets a little old. I can bake it, I can grill it, I can even sauté it; However, when the summer lingers on and continuously gives us zucchini and yellow summer squash, we must have other options.
Creating and baking a good zucchini bread was on my to-do list because of the versatility of this vegetable. Baked in a sweet bread using bananas and apple sauce, the taste of the zucchini is almost unnoticeable. If you have a picky eater on your hands, you may want to try this recipe.
