3 Summer Side Dishes

I wanted to do something a bit different with this post, I wanted to give y’all more than just one recipe.. so I decided to create a 3-in-1 post with THREE different summer side dishes. Summer dinners can either go one of two ways. It’s either super busy, running around from one activity to another trying to keep the family, maybe even your kids busy. It can also be a time to relax, unwind, and act almost as a time of preparation for the next school year ahead if you’re a student, teacher, or involved in the school year routine.

At our house, the summer time is a little bit of both. Some days it’s super busy, traveling around from one city to the next, and making sure my husband is fueled properly with good nutrition to complete all his outdoor/fishing/filming adventures. Sometimes it’s slower and we get to unwind during the evenings, enjoying our patio and food on the grill.

Whether you’re busy running around or unwinding to enjoy the summer evenings, these three summer sides were designed in mind to be served chilled so you can easily make them ahead of time. I don’t know about you but when I already have food prepped in the refrigerator ready to go, the inevitable stress to get food on the table reduces significantly.

So let go and enjoy the summer a bit more with easy meal prepping, easy recipes, and a stress free kitchen!


 

1. Light n’ Fresh Coleslaw

Not your average coleslaw bought from the store with all the added preservatives, this recipe is made with avocado mayonnaise. If you do not already own this type of mayonnaise, I think I just raised the bar for you. It’s lighter and made with all the good fats without all the extra ingredients. I usually find this mayonnaise in health food stores, grocery stores, target, Whole Foods etc. There are several different brands that offer this type of mayonnaise, and yes they are all good!

2. Mango Peach Salsa

One of my favorite traditions going back to childhood is this sweet yet tangy mango salsa. I have a previous recipe using a similar salsa topped on baked cod (find the recipe here). It’s versatility makes it wonderful for just about anything you can think of- chicken, fish, salad etc. It’s even great as snack with some whole grain pita chips, crackers, or in the morning for breakfast on top of your toast.

 3. Sweet Broccoli Salad

Okay, okay I will admit.. I got the inspiration for this side dish at Whole Foods but mine does not use mayonnaise. Instead, I decided to use a sweet balsamic glaze to change things up. Simple, sweet and easy to eat, this side dish can be served warm or chilled. Personally, I love it when it’s served chilled because it really brings out the sweetness of the red onions, raisins, and balsamic vinegar.
