Breakfast is my favorite meal of the day, especially if I have the time to actually cook something. But let’s face it, most of us don’t have an abundance of time in the morning to make a big spread of homemade biscuits, brewed coffee, poached eggs, and freshly squeezed juice. It’s just not going to happen, I get it. In fact, as I am writing this- my stomach is growling because I didn’t have enough for breakfast this morning.
It’s so important to eat a good breakfast, you’ve heard it growing up- it’s the most important meal of the day. Well there is truth to that, it quite literally ‘breaks your fast‘ and revs up the metabolism to begin the day. Our bodies, if kept up to standards, should work like well-oiled machines. A good breakfast is meant to keep you full, focused, and strong in the morning- ready to tackle the tasks at hand.
This recipe can either be prepped before hand (chopping and cubing veggies the night before) or cooked completely the night before- ready to be devoured the next morning for breakfast. However, I really meant it for those weekend mornings when we do have a bit more time in the kitchen. Time to make a delicious meal and really enjoy it without having to rush off. Finding the time to enjoy the goodness from the hardy ingredients, freshly cracked eggs, and satisfying protein in each bite.
So I guess you could say it’s the perfect breakfast to have on a lazy Sunday morning OR enjoyed on the run before a hectic day at work. It’s up to you, just make sure you have some breakfast in the morning okay, friends?
