Loaded Sweet Potato Nachos

September has finally arrived and along with the cooler mornings, it has also brought the football game season. To me, football games are a way of life in the South. Looking back as far as I can remember, football has always been my fall comfort. I always look forward to the Saturdays where I can turn on college football games and have them run all day long. It’s the sound of the whistle, the cheer of the crowd, and the spirit of the players that just bring me back to simpler times.

However, sometimes football games mean something else in the South. It’s a time to gather around family, friends, fans, and more importantly- food. Let’s face the truth here, most of the time that food is not the healthiest and it leaves us feeling groggy, sluggish, and tired the following day after celebrating a win.

So what if we changed the traditional processed football foods with some fresher, healthier options?

These ‘Loaded Sweet Potato Nachos’ take a spin on the traditional nachos, but they incorporate nutrient dense sweet potatoes instead of salty tortilla chips. Furthermore, the spiced turkey meat and fresh vegetables give your taste buds a run for their money- leaving you with a satisfied and happy tummy. Top it all off with some fresh salsa or my favorite Famous Guacamole and I would say it’s a touchdown in the taste category.

Deep orange sweet potatoes are loaded with beta carotene, which is a precursor to vitamin A in our bodies. The purple varieties of this root vegetable are rich in anthocyanins, which contain antioxidant properties that aid in anti-inflammatory properties. 

Excellent source of: Fiber, Vitamin A, B6 (pyridoxine), and Vitamin C

Good Source of: Iron, Magnesium, Niacin, Phosphorus, Potassium, Riboflavin, and Thiamin.
