Simply Brined & Roasted Chicken

If you are looking for a simple yet delicious recipe, one that leaves everybody around the table happy and healthy, this should be one of the first recipes you pull from the recipe box. It uses simple ingredients, simple prep time, and simple cooking methods for an out-of-this-world taste. Pull it out of the oven and serve it up with some of my Simply Roasted Veggies, dinner is on me but you deserve all the bragging rights.

The combination of thyme and rosemary together make such a powerful punch in this recipe, it creates a savory yet earthy taste. However, the winning feature of this recipe would definitely be the brine. The longer the chicken brines, the juicier the chicken breast becomes. I’m talking so juicy, it falls off the bone and onto the dinner plate. The first time I experimented with this recipe, I was so surprised how a simple dish could be so tender. Don’t believe me? Try it out for yourself!

When baking and roasting chicken, I like to put the temperature on a lower heat (350 degrees) to allow the chicken to cook slowly without drying out. The other secret is knowing when it is done without having to carve it open. I used a simple meat thermometer probed into the chicken breast, (my thermometer was about $5.00 at my local grocery store). I cook my chicken till it reads 160-162 degrees fahrenheit, after taking it out of the oven I let the internal temperature continue to rise to 165 degrees fahrenheit. Furthermore, I brine my chicken for about 3-4 hours, letting it soak up all the juices during the day while I am running my errands or finishing my work tasks.

Although it may seem like a long meal prep before you actually get a bite of this delicious chicken, the simplicity of the meal prep allows for time between steps. This allows you to master the multi-tasking method quite perfectly. A little meal prep here, run some errands there, roasting chicken there, finishing house duties here- before you know it the kitchen smells amazing, family gathers around the table, and dinner is ready. Sounds like a win-win if you have a busy schedule to keep.
