It’s still November, which means it’s still appropriate to continue the fall baking conundrum. Last night, I was craving something sweet yet something I could still serve up in the morning for breakfast. If you haven’t noticed yet, I am quite a fan of sweet breads.. especially when I am in the mood to bake something. Stick around long enough and you’ll start to notice some of my favorite food trends that I dish out.
This recipe is fairly similar to my other sweet bread, Scratch Made “Zucchini Banana Bread” because it uses the same basic ingredients that make it moist, and extremely tender. However, the taste is exceptionally different. It’s slightly crunchy from the pecan topping yet soft and chewy like a traditional pumpkin bread- I swear the batter even smells like sweet pumpkin pie filling. Although this bread isn’t really considered nutritionally healthy, sometimes all we really need is a little bit of sweetness and a bite of dessert in our life.
This is called balance, and to avo good life we must find that balance.
I originally was not going to post this recipe on my blog, but I made the mistake of posting a story on my Healthy Chew Instagram Account where I had so many people responding, asking me for the recipe. I thought, well why not?
It sure was a delicious last minute decision to post this for y’all.
If I had to make this recipe for one occasion only, I would prepare it for Thanksgiving morning. It makes me think of a cozy yet chilly morning with a cup of hot coffee in my hand and the Macy’s Thanksgiving Day Parade on the TV. Sounds like I just started a new tradition in my house.
However, the weather here in Texas can’t make up it’s mind. One day it’s fall, the next it’s summer. If only the weather in Texas would remain in one season long enough where I don’t have to keep changing closets everyday- that would be the real dream. But until Texas decides the fall weather will stick around long enough, I’ll keep baking up fall dishes and dreaming of those chilly fall mornings.
