Strawberry Salad with Blackberry Balsamic Dressing

When spring season hits, so do my cravings for fresh food. It’s officially perfect weather for long days at the farmers market and I couldn’t be happier to see fresh fruit and local produce. Although you don’t have to go too far for fresh produce, the grocery stores around us are starting to re-stock on seasonal produce as well. From berries to tomatoes to zucchini- spring time favorites are slowly coming back in focus.

This strawberry salad is an easy side dish to add to any meal during the spring or summer months. It is simple to throw together but has such a lasting effect on your taste buds. The homemade blackberry balsamic salad dressing is not overly sweet, but adds a slight tart taste to the strawberries and savory goat cheese. Not to mention the wow factor of making your own salad dressing when guests are over.

Salads can be quite boring if you use the same shred of lettuce, toppings, and dressing day in and day out. Changing it up with some color and taste is the easiest way to make salads great again. I only used sliced almonds, goat cheese, strawberries, and spinach but I let the dressing do the talking. This salad is also great when paired with grilled steaks, fresh seafood, pesto pasta, marinated chicken, and or baked fish. The possibilities are truly endless, making me wish this salad was bottomless.
